Recipe: Punjeni Cajni Kolutici – Filled Tea Rings

Food is a powerful tool to heal, to help and to bring people together. And food is one of the ways Emira Berberovic, who works in the Avera McKennan Hospital & University Health Center’s Food Services Department likes to spread good.

Her favorite is baking sweet foods. She likes a good stew, too, but strongly emphasizes, “I really, really like sweets.” Some of her favorite recipes include baklava, donuts and soft cream cakes. The following recipe she wished to share with you because “It’s easy, simple and always good.”

She recommends you go to Dar El Salam Market on 1022 N. Minnesota Ave., in Sioux Falls to get Cajni Kolutici “Donut” or Tea Ring Cookies. You can also purchase them from Amazon. Emira is also adamant that you use margarine for the filling rather than butter as “it’s better that way.”

Punjeni Cajni Kolutici – Filled Tea Rings

Serves: 17

Ingredients

For the filling:

  • 1 stick (half-cup) margarine, room temperature
  • ¼ cup sugar (or more to taste)
  • ½ cup cocoa powder

For the cookies:

  • 1 (1.1 pounds) bag of Cajni Kolutici
  • ½ cup milk
  • 1 bag (14 ounces) finely shredded coconut

Instructions

    1. Mix margarine, sugar and cocoa powder together; add more sugar for a sweeter spread.
    2. Take one donut cookie and fill the donut hole with spread, creating a layer across the entire cookie.
    3. Fill another cookie and place on top of the first cookie.
    4. Dip the assembly briefly in milk, then roll it in shredded coconut.
    5. Continue until you’ve made as many as you’d like or until you’ve run out of filling.
