This sweet-and-savory recipe combines the nuance of mint with sharp feta and mouth-watering melon. It makes a great on-the-deck appetizer.

Recipe: Melon, Mint and Feta Bites

Ingredients

  • A generous portion of watermelon, cut into 1-inch cubes
  • Several ounces of feta cheese
  • 3-4 fresh mint leaves
  • ¼ cup extra virgin olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon white wine vinegar
  • ½ teaspoon honey
  • Wooden or plastic toothpicks
  • Salt and pepper to taste

Directions

  1. Slice and cube the watermelon into 1-inch cubes.
  2. Break feta cheese into half-inch/bite-size cubes.
  3. Thread watermelon and cheese piece onto toothpick.
  4. Repeat until all pieces are gone.
  5. In a small bowl, whisk together salt, pepper, honey, lemon juice, vinegar and olive oil.
  6. Sprinkle bites with mint leaves and drizzle with dressing.
