Recipe: Melon, Mint and Feta Bites

Recipe: Melon, Mint and Feta Bites
Ingredients
- A generous portion of watermelon, cut into 1-inch cubes
- Several ounces of feta cheese
- 3-4 fresh mint leaves
- ¼ cup extra virgin olive oil
- 2 tablespoons lemon juice
- 1 tablespoon white wine vinegar
- ½ teaspoon honey
- Wooden or plastic toothpicks
- Salt and pepper to taste
Directions
- Slice and cube the watermelon into 1-inch cubes.
- Break feta cheese into half-inch/bite-size cubes.
- Thread watermelon and cheese piece onto toothpick.
- Repeat until all pieces are gone.
- In a small bowl, whisk together salt, pepper, honey, lemon juice, vinegar and olive oil.
- Sprinkle bites with mint leaves and drizzle with dressing.
